CSA This Week: “Rabbit Food”
…at least, that's how my wife referred to this one when I told her what I was making.
It was the first share that included local sweet corn, but the annual flood of zucchini has begun. I turned one of the zucchini into these almost-involtini for dinner.
1/2 c. panko bread crumbs
1 c. ricotta
1/4 c. grated parmesan
1 egg white
grated zest of 1 lemon
1 clove garlic, minced very fine
15-20 leaves of fresh basil, cut into chiffonade
1/4 tsp. smoked hot paprika or a good pinch of red pepper flake
pinch of freshly-grated nutmeg
Preheat your oven to 375°F.
Toast the bread crumbs in the olive oil over medium-high heat until golden brown. Remove from the heat, and set aside on a plate.
Slice the zucchini along its length into long, thin “planks” (I used my V slicer). I got about 16 usable slices; set those aside. The first and last slices won’t be thick enough to do much with, so cut them into a thin julienne and saute them quickly in a bit of olive oil and reserve them.
Combine the ricotta, half the parmesan, egg white, lemon zest, garlic, basil, smoked paprika, nutmeg, and salt and pepper to taste and mix well with a fork.
Lay out a piece of plastic wrap. Sprinkle the plastic wrap with 1/4 of the toasted bread crumbs in a rectangle about 3/4 as tall as one of the zucchini planks. Lay out 4 slices of the zucchini on top of the bread crumbs, leaving the bottom 1/4 on clear plastic wrap and overlapping the planks by about half. Smear the bottom half of the planks with 1/4 of the cheese mixture, lay on a few pieces of the sauteed zucchini, then roll the whole thing up into a fat cigar. Transfer to a baking dish. Repeat to make 4 rolls, and put any extra bread crumbs on top, along with the remaining parmesan. Bake in preheated oven until heated through and zucchini is done, 20-25 minutes.
Top with your favorite marinara and maybe more basil chiffonade.
cedar plank grilled salmon
cedar plank, 1 inch thick, soaked in water 4-6 hrs
1-1/2 lbs salmon
4 tbsp sesame oil
2 tbsp soy sauce
1 tbsp water
4 tbsp brown sugar
2 tbsp fresh dill, chopped
2 tbsp sesame seeds
mix together sesame oil, soy sauce, water, brown sugar, dill, and sesame seeds. marinade salmon in mixture while barbecue heats. place cedar plank over high heat until one side dries slightly. flip plank and arrange salmon on top, covering with remaining marinade. place the lid on the grill and cook until salmon is flaky, about 20 minutes.
